VEGAN RED VELVET COOKIES

Believe it or not – I have dreamed about these cookies before I even made my very first vegan red velvet cake! The day is finally here! It was a mere thought that is now a reality. So here’s the deal – I wanted to keep the batter as authentic to a red velvet base as possible – ensuring I captured the beautiful red color AND the light dash of chocolate that is the iconic red velvet cake. But that was the easy part, I knew that if we were doing red velvet cookies white chocolate is a necessity!! Now, finding vegan white chocolate is a slight challenge.
