VEGAN RED VELVET COOKIES

Believe it or not – I have dreamed about these cookies before I even made my very first vegan red velvet cake! The day is finally here! It was a mere thought that is now a reality. So here’s the deal – I wanted to keep the batter as authentic to a red velvet base as possible – ensuring I captured the beautiful red color AND the light dash of chocolate that is the iconic red velvet cake. But that was the easy part, I knew that if we were doing red velvet cookies white chocolate is a necessity!! Now, finding vegan white chocolate is a slight challenge. After looking up vegan white chocolate recipes – I knew I did not have time for that so I went to the most trustworthy source possible: Google! Everything turned around once I found Nestle Toll House Simply Delicious White Chocolate Morsels that can be found at your local Walmart #thankyouJesus. You simply through those pups in and you have yourselves a red velvet cookie with vegan white chocolate chips. RED VELVET COOKIES. SAY LESS!

Ingredients

  • 2 and 1/4th cups of flour

  • 2 tbsp cocoa powder

  • 1 tsp salt

  • 2 tsp corn starch

  • 1 tsp baking soda

  • 3/4 cups vegan butter

  • 1/4 cup vegan milk

  • 1 cup brown sugar

  • 1/4 cup sugar

  • 1 tbsp vanilla

  • 1-2 tsp red food coloring

  • 1/2 pack Nestle Toll House Simply Delicious White Chocolate Morsels or any vegan white chocolate

Directions

  • Mix flour, cocoa, salt, baking soda and corn starch in a medium sized bowl
  • In a large bowl – mix butter, brown sugar, reg sugar & vanilla and blend
  • Slowly mix in vegan milk and red food coloring to the butter mixture and blend
  • Next add in your dry ingredients to the butter mixture 2/3rds cup at a time mixing as you go until you form a nice dough
  • Add in your white chocolate chips
  • Roll into a large ball ( the size of your palm) and set on a buttered/oil nonstick sheet pan
  • Set the oven to 350 and cook for 10-14 minutes
  • Cookies will be large when they are fresh out the oven gently press them with a spatula
  • EAT THEM THANGS
