VEGAN BLUEBERRY DONUTS ?
God lee! When I say #yummyinmytummy – this is what I mean!! Blueberry donuts topped with lemon icing ? (bc there is no better pairing ? ) to satisfy my donut craving! When I first became vegan – vegan donuts were my breakfast, lunch & dinner ? proud to say I have grown from there but even PROUDER that I have been able to create my guilty pleasure on my own! if donuts make you weak in the knees as they do me – follow this recipe below:
VEGAN BLUEBERRY DONUTS ?

Ingredients
2 cups flour
1/4 cup melted vegan butter
1 cup almond milk
1 cup sugar any kind
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp vanilla
1/2 tsp cinnamon or pumpkin spice
1 cup fresh blueberries
- Icing
1 cup powdered sugar
2 tsp lemon extract
2 tsp vanilla
Directions
- Preheat oven to 350 and combine all ingredients except flour and blueberries and mix
- Slowly add in flour 1/2 cup at a time until your get a thick consistency
- Wash and prep your blueberries (make sure no thorns) and fold them into the batter
- Spray down your donut tray and add in your batter ( I used a piper to make sure things reminder nice and neat – also don’t over fill – otherwise donuts won’t have their signature hole) set tray in oven and bake for 20 minutes
- Meanwhile combine all icing ingredients
- While donuts are fresh, take them out of the tray – ice and enjoy!
