BACK-A-YARD JERK TOFU PLATE ?

Now I gotta be honest I was a little skeptical about this jerk tofu (gotta be honest) but lemme tell ya – THIS DISH HIT THE SPOT!!! I used to eat @backayardgrill pre-vegan life but never knew their rice and beans as well as their greens were all made with vegetable stock ???? and no animals were used in the issuing of those ? flavors. and please let’s not forget the plantains!!! this was an amazing way to end my black owned feature week (but please don’t think it stops here) and trust me when you get this dish you won’t regret it at all!!!!

COCONUTS CARIBBEAN RESTAURANT ??

Y’all may be tired of the Caribbean vibes but ya girl @blkandvegan just can’t stay away from the flava ????? LITERALLY the best outing I’ve had since COVID began ( I mean do y’all hear the music!!) I got to sit outside, have a cocktail and for once feel normal amongst all the craziness. @coconutspaloalto has the best crew and the nicest service – oh and have you seen the pics?!?!?? THE FOOD IS AMAZING! Def recommend!!! 12/10, black owned and #blkandveganapproved. Here’s what’s pictured: coconut curry tofu, itel stew (pumpkin stew SO GOOD), festival (corn fritters), greens ? & let’s not forget the dranks ?? thank you @coconuts I will def be coming back!

I truly want to highlight the service – these guys made me feel like a million bucks and had me smiling ear to ear all service! (you can order takeout and eat outside on the patio) don’t hesitate to chop it up with them bc they will keep you on your toes ?

DOLE WHIP ?

This week I’m spending time with my bestie @chikarzz !!! Which involves lots of treats and a lot of eating out ?So with this heat wave coming through the bay – it was the perfect time for #dairyfree dole whip!!! SO REFRESHING!!! For those of you who don’t know what dole whip is – basically a pineapple sorbet! You can find dole whip literally anywhere so type it in your yelp and allow the cool pineapple-y sensation take ova!!! Love you guys – hope you can find pockets of joy in your day ??

DIRTY CHI ☕️

I feel like we all need a DRANK right now – yeah I said it!!! Finally introducing the DIRTY CHI, the perfect drink for a Friday night or a cool afternoon. So simple yet so flavorful (I swear I feel like I’m a boujee bartender every time I make this) since us vegan’s typically can’t have chai tea ☕️ (since it’s laced with milk) I thought it was a fun play and a nice way to spike your tea! here’s how: 1/2 cup @tazo sweet cinnamon spice, 1/4 cup fireball & a splash of @silk dairy-free whipping cream (whipped up to a foam) with a sprinkle of cinnamon on top! honestly, you can add how much or how little of each ingredient – the more fireball the more DIRTY the less the more CHI, literally thank me later. Dirty Chi or Die

Ingredients

  • 1/2 cup @tazo sweet cinnamon spice

  • 1/4 cup fireball

  • Splash of @silk dairy-free whipping cream

  • Sprinkle of cinnamon on top

Directions

  • Begin by warming up your water and adding your tazo tea – let steep for 3-10 minutes
  • Meanwhile, begin whip your Silk Dairy-Free whipping cream
  • Slowly add your fireball to the tea and pour your whipped foam on top
  • Sprinkle of cinnamon

WALIA ETHIOPIAN CUISINE ??

I have been craving Ethiopian food for literallllyyyyyy MONTHS! I was so happy to find @walia_ethiopian restaurant in San Jose (I found it on the black-owned list I stumbled upon on IG ??) the owners are so kind and the food is bomb.com!! ? Unsure how many vegans know – but Ethiopian food is literally 99% #plantbased with delish lentils, greens and carrots – that are so flavorful boyyyyyy!!! there are so many different cultures and flavors to try so pleaseeeeeee take a chance and give different cuisines a try – I swear it’ll be worth it ??

(p.s) I remember the first time I had injera I literally could not take the sourness and didn’t try Ethiopian food until collage – and once I had injera again I instantly regretted missing out on it for so long ?

LETTUCE FEAST – LA ?

,

Word on the street is it’s #nationalfriedchickenday – but the gag is that vegans #nationalfriedchick’nday is way more juicy and flavorful ?? on the drive up from SoCal my sister and I was on the hunt for some bomb vegan good and thanks to @lettucefeastla we got the best vegan chick’n sandwhich in LA! The flavor is sooo on point – a little Cajun spice with some kick! Kinda reminded me of a vegan Popeyes ? I ordered the Nashville Sando (chick’n, pickles and coleslaw) and Triple OG Sando (chick’n, cheeze, pickles and lettuce) both dipped in their hot “honey” sauce – YUM! Oh and their special sauce is to die for! Y’all know I’m a sauce girl so I was eating it with every bite! Thank you @lettucefeastla for giving my sister and I some bomb food ?

SPICY SWEET POTATO WRAP?

OH MY WORDDDDDDDDDDDDDD!! This has got to be called the @blkandvegan signature wrap. It’s smoky, savory, sweet, crisp, refreshing!!! My Lord this is so good!! NO CAP ? We have @sweetearthfoods amazing bacon at the top (no wonder why it was a billion dollars – it’s worth it ?), some roasted cumin sweet potato’s, purple onion, cherry tomatoes, marinated kale & last but not least my sauces! I used @followyourheart vegenaise as the base & my homemade avo sauce over the kale, which is in my story and will be saved to my page bc it’s that dang good!!!!! You can find the avocado sauce tutorial here. This is the perfect dinner for these hot summer nights – you can easily just pop the potatoes in the oven and once they’re done make your wrap in 15 mins of less ?? #summerapproved here’s how below!

Cumin sweet potatoes is the only thing thats super secial in this dish – so I wanted to share the recipe below! Enjoy!

Ingredients

  • Cumin Sweet Potatoes

  • 1 sweet potato (split and chopped)

  • 1 tbsp cumin

  • 1 tbsp brown sugar

  • 1 tsp salt and pepper

  • 1 tsp red chili flakes

  • 2 tbsp olive oil

  • Wrap

  • @sweetearthfoods bacon

  • 1/4th purple onion

  • 5-8 cherry tomatoes (sliced)

  • Lemon infused kale – a handful of kale + 1 capful oil +freshly squeezed 1/4 – 1/2 lemon + salt and pepper to taste

  • @followyourheart vegenaise

  • Avocado based sauce – you can find mine linked above

  • Large tortilla shell

Directions

  • Potatoes
  • Mix potatoes, olive oil and seasonings and bake that thang @ 450 for 30 mins or until crisp
  • Wrap
  • Cook your vegan bacon to package directions
  • Begin with your tortilla wrap , add your veganeisee and lay down your bacon to start
  • Next, add your sweet potatoes and begin to layer your veggies
  • Lastly, add you avo sauce of choice, wrap that thang
  • Enjoy!

WONTON SOUP ?

Who else is down for hot soups on hot days!?!?!? LOOK, I don’t know why my body was craving this but it issss what it issss. This dish was def a little labor of love and a fun project! Very light and delicate but super satisfying! ok enough of me gabbing – if you’re like me and eat soups no matter the time of year this dish should def make an appearance in your home. WONTON SOUP ?

Light, delicious and such a fun project! Honestly, 10/10 would recommend!

Ingredients

  • Wonton

  • @nasoya premade wonton wrappers

  • 1/2 – 2/3rds block firm tofu

  • 1/4 green cabbage

  • 1/4 green cabbage

  • 2 carrots (shredded)

  • 2-3 green onions

  • Soup ?

  • 1-2 tsp red hot chili oil

  • 2-4 cloves garlic roughly chopped

  • 1/4 cup soy sauce

  • 8 cups of water

  • Salt, garlic powder to taste 

  • Lots of veggies, I used:
    cauliflower
    carrot
    bell pepper
    purple onion

Directions

  • Begin to prepare your wontons by shredding up your veggies and boiling them for 1-2 minutes, strain and set to the side
  • Roughly break down your tofu and once the vegetable mixture is cooled add together and create little pebble sized balls
  • Take your wrapper and add your ball to the center and using water to secure the edges, create your wonton shape and set to the side ( I used about half of my wonton wrappers)
  • Time to make your soup, in a large pot, place oil and garlic. next add your vegetables and cook down for 4-5 minutes
  • Add your soy sauce, seasonings and water and bring to a boil
  •  Once at a rapid boil add your wontons and cook until they float to the top (about 5 minutes)
  • Serve in a large bowl with rice, enjoy!
